Spinach Hummus from True Leaf Farms

Green Hummus

Ingredients
1 cup of chickpeas
3-4 cloves of garlic
10-12 parsley stems
20-25 rocket leaves
10-12 mint leaves
1 tbsp white sesame seeds
1 tbsp curd
1 Lemon, juiced
Salt/pepper to taste

  • Soak the chickpeas overnight
  • boil the soaked chickpeas with 1 tsp salt and oil (save this water for churning)
  • Mix everything in a grinder without water. Slowly add the boiled chickpea water to the mix while churning, to get desired consistency
  • Refrigerate and serve cold


Pro tip: add some sumac powder which is a Mediterranean spice for a great flavour.
